Cotes De Ciel Winery
While Viognier is one of the classic grape varieties in the Rhone valley of France, its introduction to Washington State has been relatively recent. Ciel du Cheval decided to plant three acres of Viognier in 1994. The vineyard was looking for another white varietal that would thrive and produce a wine of distinct character. It was an immediate success. Starting with the first harvest in 1997, Viognier from the vineyard proved to be outstanding. In 2000, Ciel du Cheval expanded its Viognier planting.

The 2012 season marked a return to a normal weather pattern after two very cool years. This allowed the fruit to develop a great flavor profile while maintaining high acid levels. Hand harvested and sorted, the grapes were whole cluster pressed to produce a juice that had low astringency. It was cold fermented until dry in stainless steel.The wine was bottled shortly after fermentation was completed to preserve the natural characteristics of the fruit.




Notes of pear, apricot and chamomile on the nose give way to apples and minerality on the palate. The near perfect fall weather preserved the natural acid of the grapes contributing crispness and a long lingering finish. 90 pts, Wine Enthusiast.
