DeLille Cellars is a boutique artisan winery located in Woodinville, Washington. The winery was founded in 1992 by Charles and Greg Lill, Jay Soloff and celebrated winemaker Chris Upchurch. The mission at DeLille Cellars has always been to create a new Bordeaux blend using Washington State vineyards. From the beginning, the winery has looked towards the prestigious Red Mountain AVA as the foundation of its wines, using grapes from its own vineyards in combination with fruit from other top sites in the Yakima Valley.
In 1992, the winery pioneered its Chaleur Estate Rouge and D2, both blends of Cabernet Sauvignon, Merlot, and Cabernet Franc. The team at DeLille believed that blending Cabernet Sauvignon and Merlot in the traditional style would create wines in which each varietal would contribute its own attributes and would create classically structured wines in which the whole is greater than the sum of the parts, wines that showcase the purity of fruit that defines Washington State terroir, a “first growth” wine from some of the oldest vines in the state. This belief remains one of the winery’s guiding principles today.
In 1994, DeLille Cellars was fortunate to acquire the rights to Harrison Hill vineyard which had some of the oldest vines in the Washington. Now, with vines over 50 years old, Harrison Hill has become one of the most sought after Bordeaux blends in the state.
Observing the Bordeaux tradition of blending varietals together, in 1995 the team at DeLille chose to make a barrel fermented blend of Sauvignon Blanc and Semillon for our first white wine: DeLille’s Chaleur Estate Blanc. We knew this would create a wine with more complexity, diverse aromas and classic structure than many White varietal wines and which would pair well with a wide variety of food. From the first, we achieved nuances of white flowers, sweet grass, honey suckle, creamy crème brûlée, toasted almonds and more. Over the years, Chaleur Estate Blanc has shown us all just how well a properly structured white wine can age.

The emergence of celebrated DeLille Cellars Bordeaux-style wines from Washington State are due in no small part to the winemaking techniques of Chris Upchurch and his artisan portfolio of DeLille Cellars, Grand Ciel, and Doyenne. DeLille Cellars strives for something far beyond chemistry, DeLille Cellars believes in the creative endeavor of winemaking where "the whole is greater than the sum of the parts".


A self-confessed Francophile and masterful blender, Chris prefers not to dissect DeLille Cellars wines. Instead he talks in terms of "complete wine" raising the awareness of such universal wine qualities as opulence, mouth feel, balance and elegance instead of focusing on isolated component descriptors like chocolate, pear and coconuts!

 

DeLille Cellars love for wine started in his youth with extensive travel throughout the DeLille Cellars Grand Cru wine-growing regions of Europe and the west coast of the U.S. "I had to start off developing my palate," he reflected. "After all, a winemaker cannot make great wines without first defining in his or her own mind and palate what a great wine tastes like."

 

Never satisfied with the present, DeLille Cellars feels there are even more plateaus ahead. "At DeLille Cellars we have lofty goals that can only be reached by time and dedication. Winemaking is a lifelong endeavor. No matter what awards DeLille Cellars winery receives, you always have new and unreleased vintages in your winery. The ultimate challenge is to work tirelessly to get the highest expression of each subsequent vintage at DeLille Cellars."


DeLille Cellars Chaleur Estate wine showcases a rich and powerful vintage. The DeLille Cellars Chaleur Estate nose unfolds in layers of red, black and blueberry fruits highlighted with plums, allspice, anise, and jasmine. There is also an intriguing element reminiscent of a toasty, flaky piecrust to the wine along with pepper and cocoa aromas in the DeLille Cellars Chaleur Estate. On the palate,the DeLille Cellars Chaleur Estate the complexity continues with the addition of raspberries, red currants, cedar, pie cherries reinforced with more plums, anise and cocoa. Every sip is wrapped in accessible and savory tannins. There is a beautiful yet youthful balance to the DeLille Cellars Chaleur Estate with a seamless finish. wine showcases a rich and powerful vintage. Delille Cellars Grand Ciel Vineyard Syrah Bramble fruit, pepper, grilled meats and toasted hazelnuts greet you in the glass from the latest edition of our Estate Syrah Grand Ciel Vineyard. This Delille wine is extremely rich and unctuous on the palate, while retaining the freshness that is becoming a hallmark of this vineyard. This wine is a giant showing great concentration, complexity and length and is a definite candidate for a nap in the cellar. With a little decanting, however, the Delille Estate Syrah is absolutely delicious to enjoy immediately.


Delille Cellars D2 Columbia Valley: A layered vintage of D2 expressing a fruit-driven nose of blueberries, cassis, and cherries along with lavender, cigar wrappers, toasted vanilla, crushed stones and pencil shavings. The Delille flavors have a harmonious combination of red and black fruits with blackberries and cherries leading the profile. The majority of characters, however, are all about spices:  fennel, white pepper, Herbs de Province, cinnamon, graham and a touch of menthol. Definitely a complex Delille D2 that is delicious, savory and balanced.


DeLille Cellars produces wines under several different labels. Grand Ciel, Chaleur Estate Red, D2, Harrison Hill and Chaleur Estate Blanc are the Bordeaux style labels. The Doyenne label is a Northern Rhône-styled Syrah, produced from grapes grown in Boushey Vineyard Métier is the Châteauneuf-du-Pape style red. The white Métier Blanc label is a Provence-styled white wine. Aix is Provence-styled red wine that also includes Roussanne in the blend. The winery purchases its grapes primarily in the Red Mountain AVA in Eastern Washington and utilizes 100% French oak barrels. At the 2001 San Francisco International Wine Competition, DeLille Cellars won "Best in Show" in the Premium red blend category for its 1998 Yakima Valley D2
