This richly textured Pinot finishes with depth and grace.Our Pinot Noir is made entirely from Edna Valley grapes harvested from the scenic Paragon and Firepeak vineyards located between Islay Peak and the Edna Valley Vineyard. Several Pinot Noir selections are planted on the rolling hills of these vineyards. The selections include Pommard, Wadenswil, and Mariafeld Pinot Noirs originally from Alsace and Switzerland, as well as three from t h e Burgundy collection at Dijon, France. Blending these many selections gives us a profusion of wonderful flavors and textures to "paint" with, resulting in a wine displaying. forward fruit flavors of berries and black cherries, earthy aromas of tar and leather, a full, rich mouth with medium tannin and a lingering, smoky finish. Perhaps the most flexible of all the red wines to match with food, this Pinot Noir is wonderful with pork, ham, and veal as well as venison or game dishes. Its subtle acidity makes it an exciting replacement for white wines with foods such as well-seasoned salmon or fowl
